homemade coconut yogurt

This is a recipe I think you will love not only because it is easy, but also because it is a great alternative to dairy yogurts. I have been using this coconut yogurt as the base for my homemade parfaits.

You will need:

  • 2 cans of coconut cream (or coconut milk. Use the “creamy” part of it)
  • 1 probiotic capsule (it has to be 50 billion or combine several to make this amount. Also ok with 60 billion)
  • 1 glass bowl
  • Wooden spoon
  • Small glass containers to make individual size parfaits
  • Your preferred selection of nuts or even granola
  • Maple syrup. You can also add chopped dates.

First sterilize the bowl you are going to poor the coconut cream in. I boiled water and I poor it into it and then let it air dry. Repeat the process with the individual glass containers.

 

Instructions:

Add the contents of 2 cans of coconut cream into the bowl- remember only the cream (no liquid)

Split open the probiotic capsule and poor it into the cream

With the wooden spoon mix all together until well combined

Cover glass bowl with clear film and put it in the oven over night or for 12 hours (oven is not on)

Once 12 hours have passed, take the bowl out of the oven and smell. It should have a nice “yogurt” smell. If it smells strange to you, throw it away and repeat process. *This has never happened to me, but just sayin’

Transfer bowl into fridge and let it thicken up. I usually leave it for 2 hours or check on it when I come back from work.

Yogurt should keep up to a week in the fridge.

 

Parfaits.

Divide coconut yogurt into your individual glass containers. I usually make four of them.

This is where the fun starts! Add chopped almonds, cashews, raisins, cranberries or even just granola. You get to pick whatever you want to put into these little guys.

I also add a little bit of maple syrup when I am feeling decadent, and when I want my husband to like it! You can add honey, or no sugar at all if you enjoy, like me, the flavour of coconut by itself.

Place into the fridge and enjoy during the week. You could also do this overnight for the next morning, and even add chia seeds for thicker consistency or when looking to add more fibre into your diet.
